Antioxidant activity of dried elderberry fruit infusions Sambucus nigra L.

Elderberries (Sambucus nigra L.) available on the Polish market are characterised by a variable content of bioactive compounds. e aim of this study was to evaluate the antioxidant potential of infusions of six dried elderberry preparations available on the Polish market in 2023. The content of anthocyanins and total polyphenols as well as the antioxidant capacity using the DPPH radical were determined by UV-Vis spectroscopy. The highest contents of the analysed components and antioxidant activity were found in sachet infusions – T-2. Whole fruit infusions (S-1 – S-4) showed similar values for the parameters studied. It was found that polyphenols are
almost entirely responsible for the antioxidant activity of elderberry fruit infusions, and that the technological form of the product has a greater inuence on the content of phytochemicals and antioxidant capacity than the place of obtaining it.
