Tradycyjna dieta japońska a ryzyko sercowo-naczyniowe

Tradycyjna dieta japońska określona jako Washoku wpisana jest na listę niematerialnego dziedzictwa kulturowego ludzkości UNESCO. Liczne badania wykazały, że dieta Washoku i produkty charakterystyczne dla tej diety zmniejsza ryzyko występowania chorób cywilizacyjnych, w tym otyłości, cukrzycy, miażdżycy oraz niektórych typów nowotworów. Spożywanie różnorodnych produktów, głównie pochodzenia roślinnego (np. warzywa, produkty sojowe, wodorosty), niskie spożycie mięsa a także wykorzystanie charakterystycznych dla diety Washoku lokalnych surowców (ryby, owoce morza) sprzyja utrzymywaniu prawidłowej masy ciała i może być przyczyną niskiego wskaźnika występowania chorób kardiometabolicznych w populacji japońskiej. Wszystko to sprawia, że stosowanie się do zasad diety japońskiej może być jedną z przyczyn długowieczności Japończyków. Celem niniejszego artykułu przeglądowego jest charakterystyka diety Washoku, omówienie wpływu jej poszczególnych składowych na wybrane parametry kardiometaboliczne i ryzyko powstawania chorób sercowo-naczyniowych w populacji japońskiej.
